Happy cows make good cheese, he said. And he should know.
Kenny Mattingly's family has owned a dairy farm since the 1970s. In 1998, they began to make cheese. And now, Kenny's Farmhouse Cheese, located in Barren County, produces 14,000 pounds of about 30 varieties of cheeses each month. About 12,000 pounds is sold each month to grocery stores, restaurants, farmers' markets and individuals via the Internet.
On Tuesday night, Mattingly came to Taylor County Public Library and spoke to about 30 people, telling them how he makes and sells his cheese.
Mattingly said his son recently began growing grapes on his farm to eventually sell wine.
